Buying beef directly from your rancher is the most economical way to ensure a year-round supply of premium, nutrient dense beef for your family. Orders are available in bulk by Side(Half) or Whole beef. Here at Kohut Farm, we slaughter when the cattle are optimally finished naturally each Fall starting in October. Your order and deposit reserves your spot for the processing season. Beef is available first-come-first served and supplies are limited. Orders are open for this fall! A deposit of $500 is required per 1/2 share. Beef will be harvested in late Nov/Dec 2024
Pricing is based on hanging weight from butcher. This is the weight of the carcass after butchering but before aging and the cutting and wrapping. Hanging weight per half averages between 300-325 lbs. You should expect to receive approximately 65%of the hanging weight in your freezer as individual cuts. This can vary depending if you choose to take the trimmings and organs, etc. (plan on 8 cu ft of freezer space per 1/2 beef)
Half Beef (One Side): A Half of Beef, also known as a "Side of Beef" is suitable for a small family or a couple who entertains occasionally. Hanging weight is about 300-325 pounds per half. A small to medium deep freeze is recommended. The butcher will talk you through the process of customizing your beef to suit your needs. This allows you to choose what you want for cuts regarding package size, cut thickness and cut types.
Whole Beef (Both Sides): A Whole Beef is perfect for a family of 4-6 who loves their beef and does some entertaining. Also consider a Whole Beef for splitting with friends or family. Expect approximately 600-650lbs per whole beef including the soup bones. The butcher will talk you through the process of customizing your beef to suit your needs. This allows you to choose what you want for cuts regarding package size, cut thickness and cut types.
5th Quarter Offal Option: (organ meats: Liver, Heart, Kidneys, suet fat, Thymus, Tongue) Available upon request for $4.00/lb. Recipes are available from www.kohutfarm.ca
Example for a buying a WHOLE BEEF (approx. 600 pounds hanging weight which includes bones @ $6.50/lb): Make your deposit to secure your beef ($500 per half been paid by cheque, e-transfer, Bitcoin or cash) Remainder due after slaughter day and before beef pick up; $6.50/lb based on hanging weight (approx. 600lbs) less the deposit. Note: Hanging weight may vary + / – 100 lbs (usually between 600 – 700 pounds) Note: Slaughter cost is included in the beef price. Note: Cutting & Wrapping Costs are paid by the purchaser directly to the Butcher (approx. $1.00 - $1.10/lb)
